Blahitka found us through Hostel.com and visited the Largo School
in June of 2000. She helped us finish the skylight renovation,
install a bathroom window, tar the roof, and numerous other small
chores. One of the special things she brought to us was the
experience of Ukranian cooking. Here is her recipe for Varenyky
(Pyrohy or Dumplings), so should she ever be wandering out there
in the wide world and need the recipe again, she won't have to
call her mom and ask for her to fax it again. Come back soon,

4 cups flour
1 tsp salt
1 egg
1½ c water
Put flour in bowl
Beat egg together with water
Add egg-water mix to flour and stir to clear bowl, then remove
and knead for a few minutes.
When the filling is ready, roll the dough into a roll, cut into slices and fill like a turnover, pressing the edges to seal the filling inside the dough. Drop into boiling water, let rise to surface of water. Serve with melted butter, keep hot until ready to serve. Top with buttered bread crumbs and serve with sour cream.
1½ c. saurkraut
2 medium onions
1/3 c butter or other shortening
Cut onions into small pieces and brown in melted butter over a small flame for 20 minutes or so. Wash saurkraut 3 times, squeezing dry each time and using fresh water each time. Add onions and fry over medium heat until the sauerkraut is tender. Chill thoroughly before using filling.
2 cups chopped cooked mushrooms
1 small onion
2-3 tbsp butter
salt and pepper
2 egg yolks
chopped dill (optional)
Cut onions into small pieces and brown in melted butter until tender. Add mushrooms and cook over medium heat for 10 minutesr. Remove the mixture from the stove and beat in the egg yolks. Add dill if desired. Chill thoroughly before using filling.
5 lbs potatoes
2 onions
butter
Farmers or cottage cheese
salt and pepper
Boil potatoes, add salt. Fry onions in butter until tender. Hash popatoes, cheese, onion mixture. Mix well.
